Taco Pasta Recipe

Happy Monday friends! When I sit down to plan our meals for the upcoming week (more on this in my last post), I always ask Ryan if he has any dinner requests. I kid you not, 9 times out of 10 his answer will be, “Let’s have tacos!”. While I will NEVER complain about having tacos (duh, they’re the best), I usually try to find alternative ways for us to eat them so we won’t get sick and tired of our favorite meal.

If Ryan and I had to pick two things to eat for the rest of our lives, tacos and pasta would win by a landslide. We usually have tacos (or some variation of tacos) about once a week, and we eat pasta every few days! Therefore, I am SO excited to share this recipe for Taco Pasta with you!

So, let’s taco ’bout it (haha, get it?). This recipe is insanely easy to make, only requires a few simple ingredients, and you can make this dish in about 20 minutes. Can I get a “heck yes”?! It is so delicious, a perfect way to change up your taco dinner, and just in time for Taco Tuesday tomorrow! Let’s get to cooking, shall we?

Ingredients:

  • 1/2 pound of large shell pasta
  • 1 pound of ground beef
  • 1 packet of taco seasoning
  • 3/4 cup of water
  • 1 cup of salsa
  • 1 cup of freshly grated cheddar cheese

Directions:

  1. Cook the pasta according to package directions. Drain the water.
  2. While the pasta is cooking, brown the ground beef. Drain the fat.
  3. Add the taco seasoning and the water to the cooked ground beef. Stir well and cook until the water is almost gone.
  4. Combine the cooked pasta with the ground beef.
  5. Add the salsa and the cheese.
  6. Stir to combine.
  7. Serve and enjoy!

I am aware that this recipe isn’t the healthiest option when it comes to dinner recipes, but there are definitely some ways to make this healthier for you and your family. Some easy substitutions you can make are whole-grain pasta for the regular pasta, using ground turkey instead of ground beef, and also using an all-natural salsa. If you want to really load up your plate, you can add some extra cheese on top (if it isn’t cheesy enough for you already), or you can choose to add some crushed tortilla chips or cilantro on top of your dish…YUM!

I hope you all enjoy this recipe as much as we do! Let me know if you decide to give this a try for your next Taco Tuesday!
