This bread is bananas, B-A-N-A-N-A-S (in my Gwen Stefani voice). Seriously, this may be the best banana bread recipe that I have tried! And when it comes to bread, I never mess around. I love this recipe so much because it makes a perfectly moist bread and it is fairly easy to whip up. As long as you have a few ripe bananas lying around, I would bet money that you already have the remaining ingredients in your pantry. Isn’t that the best feeling- when you go to bake something and you already have everything you need to make it?!
The key to nailing any bread recipe is having a really good loaf pan (am I the only one who thinks “loaf” is a funny word?). I am a huge fan of this pan here because first and foremost, it has a clear nonstick coating on it. Gone are the days where you are forced to spray your pan like a mad woman or load it up with a ton of butter to ensure it comes out of the pan nicely. The nonstick coating also makes it ridiculously easy to clean! Lastly, the pan has a ridged surface to it which increases the airflow during baking and results in a perfectly even and baked bread. If you are in the market for a new loaf pan, I would definitely recommend this one!
Okay, enough chit-chat. Let’s get to baking, people!
Ingredients:
- 3 large bananas (the riper, the better)
- 1/3 cup of melted butter
- 1 egg
- 3/4 cup of granulated sugar
- 1 teaspoon of vanilla
- 1/4 teaspoon of salt
- 1 teaspoon of baking soda
- 1 1/2 cups of flour
- **Optional Ingredients: a handful of chopped nuts or a handful of chocolate chips**
Directions:
- Preheat the oven to 350°F.
- Peel the bananas and place into a mixing bowl.
- Mash the bananas.
- Stir in the melted butter, egg, sugar, vanilla, and salt. Mix well.
- Add the flour and baking soda and mix well. If you chose to add nuts or chocolate chips, add these in at this time.
- Pour into a loaf pan.
- Cook for 1 hour.
- Let the bread cool completely before removing from the loaf pan.
Ryan and I love this bread so much that we usually eat the entire loaf in about 2 days (how embarrassing). It’s our go-to snack for afternoon coffee or even for breakfast in the morning. Believe it or not, Ryan doesn’t even like bananas! But oddly enough, this bread is one of his favorites. If you give this recipe a go, let me know in the comments how you liked it!
