Let’s face it, summertime is usually when everyone gets their grub on, right? Or am I the only one here? With all the warm weather, constant running around, and loads of time spent outdoors, it’s safe to say I always have my fair share of snacks around the house. Like, I ALWAYS have a snack in my hand in the summertime! Not to mention, the number of picnics, parties, beach days, and barbeques that we attend with our friends and families don’t really help the nonstop munching. The only problem with this? Our bikini bodies will NOT thank us for this later! Sometimes, it can be difficult to find a snack that’s super yummy but will also allow you to rock that bathing suit with confidence all summer long. That’s why today I’m sharing 3 snacks that are super easy to put together, delicious, healthy, and perfect for summer snacking!
Caprese Salad Skewers
Ingredients:
- About 2 dozen cherry tomatoes
- Mini balls of mozzarella cheese
- Fresh basil leaves
- 1 cup of balsamic vinegar
Directions:
- In a saucepan over high heat, bring the balsamic vinegar to a boil.
- Lower the heat to medium and simmer for about 10 minutes or until it has slightly thickened.
- Remove from the heat and let it cool.
- On each toothpick, place 1 tomato, 1 basil leaf, and 1 mozzarella ball.
- Use a spoon to drizzle the balsamic reduction over the filled toothpicks.
Notes:
- About 15-minute total prep and cook time.
- Makes about 2 dozen skewers.
Frozen Yogurt Blueberries
Ingredients:
- 1 cup of blueberries
- 1/2 cup of yogurt (your choice of flavor)
- A few toothpicks
Directions:
- Line a cookie sheet with parchment or wax paper.
- Place a blueberry on a toothpick and dip into the yogurt.
- Use another toothpick to push the berry onto the paper-lined cookie sheet.
- Freeze berries for at least 1 hour.
- Serve immediately and enjoy!
Notes:
- Store in an airtight container in the freezer.
- About 1.5 hour total prep and cook time.
Frozen Peanut Butter & Chocolate Bananas
Ingredients:
- 3 bananas
- 1/3 cup of nut butter of your choice
- 1/2 cup of Nutella or melted chocolate
Directions:
- Line a cookie sheet with wax paper.
- Cut bananas into slices.
- Spread a little nut butter onto one banana slice and sandwich two slices together.
- Place onto paper-lined cookie sheet.
- Freeze for about 1 hour.
- Dip each banana “sandwich” into melted chocolate or Nutella and place back on the wax paper.
- Freeze for about 1 hour.
- Serve immediately and enjoy!
