Chocolate Chip Skillet Cookie | Date Night Dessert

So, it’s no secret that the (never-ending) lockdown and the whole, having a baby thing, has seriously put a damper on our date nights. Gone are the days where we can spontaneously head out for dinner and a movie. And if we want to run out the door to grab dessert together, we have a 20-pound  third wheel who will most likely beg for a spoonful of whatever we’re having!

Therefore, we have really started to make an effort lately to have “Date Night” at home. Whatever we can do to make the evening special is a win in my book. One of my favorite things to do is whip up a special dessert for us to share together. For Valentine´s Day this year, I made this Chocolate Chip Skillet Cookie, and it was a HUGE hit. I mean, can you really go wrong with a chocolate chip cookie, ice cream, and melted chocolate? I think not.

So, the next time you are trying to find some way to have a fun date night at home with your sweetheart, whip up one of these and serve with 2 spoons to share!

Behold…the ultimate Date Night Dessert!

Ingredients:

  • 1/2 cup of flour
  • 1/4 teaspoon of baking soda
  • 1/4 teaspoon of Himalayan salt
  • 1/4 cup of granulated sugar
  • 1/4 cup of light brown sugar
  • 1 teaspoon of vanilla extract
  • 1/4 cup of butter, melted
  • 1 egg yolk
  • 1/2 cup of chocolate chips (set aside a few tablespoons to melt later on)
  • Vanilla ice cream for serving

Directions:

  1. Preheat your oven to 350°F and butter your cast iron pan.
  2. Whisk together flour, baking soda, and salt in a bowl.
  3. In a separate bowl, combine the sugars, vanilla extract, and butter. Mix to combine. Add the egg yolk and stir.
  4. Pour the wet mixture into the flour mixture. Mix until completely combined.
  5. Stir in the chocolate chips.
  6. Transfer the cookie dough into the cast iron pan so it’s evenly distributed across the skillet.
  7. Bake for 15-20 minutes, or until the edges are puffed and golden brown.
  8. Remove from the oven and press a few chocolate chips across the surface of the cookie.
  9. Melt the remaining chocolate chips in the microwave.
  10. Garnish the cookie with a scoop of vanilla ice cream and drizzle the melted chocolate on top.
  11. Serve with two spoons and enjoy!
