Quick & Easy Fettuccine Alfredo Recipe

I don’t know about you guys, but I feel like I have been in the ultimate dinner-rut lately. Ever since we got back from the holidays, I have been struggling to come up with dinner ideas for Ryan and I. Not to mention, at 7 months pregnant, my motivation for slaving away in the kitchen over a hot stove is severely lacking!

I have been gravitating towards quick and easy meals that don’t require a ton of ingredients, and ones that I can whip up in under 30 minutes. It’s no secret that both Ryan and I are HUGE pasta lovers…I mean, we could eat pasta every night and never get sick of it! Fettuccine Alfredo is one of my all-time favorites and I have been on the hunt for a go-to recipe for some time now! The good news is…I think I finally found it! We have made this recipe several times now without fail and I am a big fan! It’s really simple to whip up, doesn’t take a ton of time, and you may even have all the ingredients sitting in your kitchen already. It’s the perfect weeknight meal that your whole family will be sure to love!

Ingredients:

  • 1 pound of fettuccine pasta
  • 1 pint of heavy cream
  • 1/2 cup of butter
  • 2 tablespoons of cream cheese
  • 1 cup of parmesan cheese
  • 1 teaspoon of garlic powder
  • salt and pepper to taste

Directions:

  1. Cook pasta according to package directions.
  2. While the pasta is cooking, combine heavy cream, butter, and cream cheese in a saucepan. Bring to a simmer and keep it simmering until all is melted and mixed well.
  3. Whisk in the parmesan cheese and garlic powder. Simmer for about 10-15 minutes on medium-low heat just until it thickens. Add salt and pepper to taste.
  4. Drain pasta and add it to the finished sauce.
  5. Serve and enjoy!

Notes:

  • You can add in your own flare to this recipe! Mix in grilled chicken, shrimp, peas, or whatever else your heart desires! The possibilities are endless!
