Well, guys, we are now less than 1 week away from the 4th of July! The 4th has always been one of my all-time favorite holidays. Maybe it’s the fireworks, maybe it’s the never-ending supply of burgers, yummy snacks, and desserts, or maybe it’s the time spent at afternoon barbeques with friends and family. Whatever the reason may be, I have always adored this particular holiday!
Since leaving the States, we obviously haven’t been able to celebrate the 4th in the way that I would like to. However, I always make it a point to make some sort of patriotic themed food or dessert. Stuffing your face with red, white, and blue colored food…it doesn’t get more patriotic than that, does it?!
Whether you have plans to attend a big barbecue for the 4th of July, or you’re planning on laying low at home, I have the most perfect dessert to help you celebrate! Behold…The Cheesecake Strawberries. These strawberries are fairly quick and easy to whip up, which is great because now you have time to prepare the other dishes you are bringing to your weekend barbecues! I love these because they’re a healthier alternative to other typical desserts, but are still tasty as heck! It’s darn near impossible to eat just one. You’ll probably gobble up a 2nd, or 3rd…or even 4th!

Cheesecake Strawberries
Ingredients:
- 2 dozen strawberries
- 1 package of cream cheese (8 oz.) at room temperature
- 1/2 cup of powdered sugar
- 1 teaspoon of vanilla extract
- 1/2 cup of blueberries
Directions:
- Cut off the tops of all the strawberries so they can stand up with the cut-side facing down.
- Cut an “X” in all of the strawberries from the tip down. Be sure not to cut all the way through.
- Using a hand mixer, beat together the cream cheese, powdered sugar, and vanilla until the mixture reaches a smooth and fluffy consistency. **NOTE: you must wait until the cream cheese has reached room temperature before you begin mixing. It is crucial for the consistency of the mixture.
- Fill a pastry bag with your cream cheese mixture. Pipe the filling into each strawberry. **NOTE: If you don’t have a pastry bag, simply fill the mixture into a Zip-Lock baggie, cut the corner, and squeeze the filling into each strawberry.
- Garnish each strawberry with a blueberry.
- Chill the dessert for at least 1 hour before serving. This dessert will only last a couple of days in the refrigerator so you have to eat them fairly quickly…oh what a shame (wink, wink)!
- Eat and enjoy!
