Happy November everyone! Can you believe that Halloween is over and we are entering into the holiday season? Yeah…me neither! Anyways, I hope you all had a great Halloween and if one thing’s for sure, I guarantee many of you ate your weight in leftover Reese’s and Kit Kat’s last night. Am I right?
In case you’re wondering what to do with all of that leftover candy you have laying around, I have the perfect solution for you. These ooey, gooey, Chewy M&M Cookie Bars are to die for! I personally love to put M&M’s into these cookie bars when I make them. However, you can easily thrown in whatever candy you have lying around. You cannot mess these up here, people!
I am 110% positive that you will be just as obsessed with these as we are. With that being said, let’s get to baking!
Ingredients:
- 2 1/4 cups of all purpose flour
- 1/2 teaspoon of salt
- 1/2 teaspoon of baking soda
- 12 tablespoons of salted butter- melted
- 1 cup of light brown sugar
- 1/2 cup of granulated sugar
- 1 large egg
- 1 large egg yolk
- 1 tablespoon of pure vanilla extract
- 1 1/2 cups of M&M’s
Directions:
- Preheat your oven to 325°F.
- Line a 9 x 13 baking pan with foil, with enough hanging over each side to make a sling (for ease of removal after baking). Grease the foil and set aside.
- In a bowl, whisk together the flour, salt, and baking soda.
- In a separate bowl, stir together the melted butter and both sugars. Stir in the egg and extra egg yolk. Stir in the vanilla extract.
- Using a rubber spatula, fold together the dry mixture into the wet mixture, just until incorporated. Do not over-mix!
- Fold in approximately 1 cup of the M&M’s. Set aside the rest for pressing on top.
- Using slightly wet fingers, press the dough into an even layer in the foiled pan, making sure to get an even thickness throughout. Press the remaining M&M’s on top of the dough.
- Bake 25-28 minutes or just until it’s puffy and golden brown. Note: it may look a bit under-baked, but take it out anyway! I promise, it will set nicely upon cooling.
- Let cool completely at room temperature.
- Once cooled, remove the dessert with the foil sling and place on a cutting board. Cut into squares and store in an airtight container.
